«Super Nachos » – Super dinner for 30 minutes

“Super Nachos ” is the perfect dinner for fans of Mexican cuisine. Here you can find the typical bright colors, sharp spices and great taste. It is made from home-made cheese, beans, spices, beef and sauce ” Pico of gallo “and of course, your favorite nachos.

Ingredients:
2 packages of corn chips – of different color or taste, as found in the hypermarket

About Salsa Pico de Galio:

4 mature tomatoes (peeled and chopped)
1 hot pepper (cleaned from seeds and finely chopped)
1 small onion (cut into pieces)
1/4 tablespoon or 2 handfuls of coriander leaves (finely chopped, can be replaced with parsley if the coriander does not like you)

For topping:

1 tablespoon of olive oil
450 g of beef mince
2 cloves of garlic (finely chopped)
1 small onion (sliced)
1 pepper (peeled and chopped)
1 tablespoon of salt
1.5 tablespoon hot pepper
1.5 tablespoon cumin
1 tablespoon chilli
1 box of canned black beans (425 g)

Cheese sauce:
2 tablespoon oil
2 tablespoon flour
2 tablespoon of milk
350 g of pepper “Pepper Jack” pepper (grated wholesale, can be replaced with the usual if necessary)

Additional garnish:
Sour cream
Chopped green onions
Finely chopped black olives
Chopped avocado (seasoned with lemon juice)
More chili peppers

Directions:

Spread the mixed corn chips into a very large dish or open pan.

Combine all ingredients for salsa in a saucepan and let them bite to mix their tastes.

Preheat the pan to an average temperature. Add butter, garlic, onion, pepper and fry for 2 minutes, then add the mince and stir with a wooden spoon.
Leave the meat with salt, chilli, cumin and sauce with chilli pepper, cook for 5 minutes, then add beans and reduce the heat to a minimum.

In a medium sauté oil pan , melt the butter and add the flour for 1-2 minutes at moderate heat, then pour the milk. When bubbles begin to appear on the surface, add the cheese and stir with a wooden spoon. When the sauce of cheese is ready, it can be removed from the fire.

Spread evenly the sauce over the stacked chips. Add beef and beans. Pick up the top of Pico de Gallio .

Your Super Nachos is ready for a summer dinner in the heat. You can add garnish from the list and ice beer for pleasure!
