This recipe for pancakes will break the resistance of children who refuse to eat foods rich in iron. This dessert would also be a great breakfast or lunch meal – tasty, sour and healthy.
800 g potatoes
2 tablespoons flours
1 tsp. Salt
Dried black pepper
1/2 teaspoon paprika
20 sheets of spinach (you can replace them with other leafy vegetables or carrots.)
Oil, if necessary
Method of preparation:
Peel the potatoes and grate them on the large grater. Put them in a colander and rinse them well. Then leave the container to drain as much as possible.
Cut the onion and add it to the potatoes in a new bowl. Put there and 1 egg, flour, chopped spinach and spices, mix well.
A small amount is taken from the mixture, and a ball is pressed with a hand.
Put the balls in a pan with hot oil and press them with a fork until small pancakes are obtained. You can also pre-shape the “dough” of the pan, as long as the consistency of the mixture is thick enough.
Pancakes are fried until they get beautiful tan.
There should be about 1/2 cm of butter in the pan to fry well, but they should not be completely covered.
You can serve them with sour cream or mayonnaise.
