Ricotta is an Italian cheese that is usually used to prepare Italian recipes. It can also be used as a substitute for mayonnaise in traditional salads with eggs or tuna.
Here’s how to prepare it yourself:
1 liter of whole milk
100 ml of sour cream
30 grams of lemon juice
Milk, salt and sour cream are heated to 80 degrees. If you do not have a thermometer, turn off the hotplate when the milk starts to foam and when you can not hold your finger in the mixture. Then leave the mixture of milk and cream on the hot plate. Add lemon juice. After another two minutes, boil and allow to cool to room temperature.
Pour the mixture into a clean gauze, tie it and leave it in the fridge overnight.
