The days before Easter can be a whole test, especially if you have decided to fast. Cooking without butter is a whole challenge but also the opportunity to taste unusual tastes such as celery cream soup.
1 bigger piece of celery
1 smaller onion
Salt and pepper (turmeric, mint, rosemary – optional)
1. Wash the vegetables thoroughly, cut them into pieces and boil them in water until they completely soften.
2. Transfer them to the blender and blow them until you get a homogeneous mixture.
3. Transfer the mixture to the saucepan, add the spices as desired, add water to the desired density and let the broth find it well.
4. Decorate with fresh parsley and serve with small pieces of toasted bread (make sure that the bread does not contain oil) or ready crouton.
