Macedonian Pingjur – A unique recipe

It is not too late to make a winter! This time try something classic like a pinch recipe. Do it the way you do it in Southwestern Bulgaria and Macedonia. The experiments are something good, but they are no more wonderful than the aroma and taste of the grandmother’s winter!


3 kg of red peppers
1.5 kg of eggplants
1.5 kg of tomato
150 g of onion
200 ml of oil
250 g of hot peppers
1 t of salt and sugar


1. Bake the peppers, eggplants and tomatoes, clean them from the peel and chop into a meat grinder.
2. Place the butter in a hot container, then add the ground vegetables. Add salt, sugar and chopped garlic. Season for 10-15 minutes. At the very end, add the chilli peppers you have baked a little before, but make sure they do not decompose but remain whole.
3. Put the hot pinchir into hot jars which should immediately close and leave them facing overnight to cool.
