There is no more popular garnish in Bulgarian potato puree cuisine.
Combine well with all fried and roasted meats. Preparing is not difficult, and everyone has their own recipe to do.
It is known that the basic things about a good potato puree are their appearance and the cooking temperature. Chief Taylor Florence, known from the Chef’s Food Network channel, has more secrets to share. To prepare a fluffy and gentle garnish, you should:
Wash, peel and cut the potatoes, then add them to a pressure cooker along with cooking cream (about 0.5 liters).
Add 3 tablespoons of olive oil and 3 tablespoons of butter.
If you want, add salt, pepper or other spices.
Cover the dish and set it to boil for about 20 minutes.
Strain the potatoes, but keep the cream. Then slowly add it to the potatoes.
