When you need energy and warmth, it is best to try a classic recipe from some national cuisine. If you love Italian, your choice will be 100% Minestrone – the perfect vegetable soup!
50ml. Olive oil
2 cloves of garlic, cut
1 leek finely chopped
2 carrots, cut
2 roots of celery finely chopped
200g potatoes peeled and finely chopped
350g cabbage finely chopped
1 bay leaf
1.5 liters of chicken broth
800g preserved tomatoes
175g small pasta for soup
400g cooked beige beans
2 tablespoons chopped parsley
2 tablespoons of fresh basil
200g grated parmesan
Peel the bark of the bacon and cut it into small pieces. Heat the butter in a bigger medium-heat dish and add bacon, leek, garlic, carrot, celery, potatoes, cabbage and bay leaf.
Cover the dish with a lid and cook for about 15 minutes stirring occasionally. Then remove the cover. Add tomatoes and chicken broth. When the soup boils, lower the degrees and let cook for 10 minutes.
Add pasta and cooked beans, increase the heat level and let the soup boil. Then reduce again and cook the broth for another 8 minutes, not forgetting to put a lid over the pot.
Add parsley and basil to the soup and mix well. Season with salt and pepper to taste.
Serve the soup warm and necessarily with grated parmesan in each bowl.
