Our next two-of-a-kind dish is a full-time gift from Italian cuisine. The recipe combines the two most popular dishes from the Naples region and, according to the urban legend, frittata di spaghetti is the favorite dish of Sofia Loren.
250 g spaghetti
750 grams of cherry tomatoes
125 grams of tomato sauce
120 g of cheese (like Scamorza) (You can be replaced with Mozzarella)
100 g grated hard cheese (Parmesan type)
salt and pepper
Wash the cherry tomatoes and cut them half. In a deep pan, heat the olive oil, add the tomatoes, tomato sauce, salt and pepper to taste. Let the mixture boil for about 20 minutes, stir occasionally.
Spaghetti are boiled in large quantities of salt water according to the instructions on the package. Prepared and drained spaghetti pour the dish with tomato sauce. They are well mixed and removed from the fire.
Cut the Scamorza cheese into cubes. In a large bowl, whisk the eggs, add grated hard cheese, cubes of Scamorza cheese (or Mozzarella) and chopped basil. Add salt and pepper to taste.
Add the resulting egg mixture to the chilled spaghetti. Stir. Heat the olive oil in a large pan. Put the spaghetti and eggs on a pan and brown until a crust forms. Pour the pan several times to prevent the frying pan from sticking.
