Falafel – a magic vegan taste

Arab cuisine is associated with a lot of aromas and heavy food. This is not always the case. If you love alluring and lean, in the Middle East you will find an appealing temptation for vegetarians and people on a diet.


200 g of chickpeas
2 tablespoons of flour
2 cloves of garlic
1 teaspoon of caraway
1/2 teaspoon of nutmeg
1/2 tablespoon of red pepper
3 tablespoons fresh parsleys
salt and pepper to taste
Cooking oil
For the sauce:
2 tablespoons of yoghurt
1 tablespoon tahini
1/2 lemon juice
1 clove of garlic
salt and black pepper


Make the sauce by mixing the ingredients and letting it cool in the refrigerator.
Chickpeas must remain in the water to stay overnight and then to drain.
Put the prepared chickpeas in water and boil for moderate heat for about an hour. Drain and allow to cool. Pass it, then add onions, garlic, flour and spices. Combine them in a compact mixture if the mixture is too oily add one to two tablespoons of water.
