Saint Nicholas Day is a great holiday, which should not be overstretched with work, even in the kitchen. For half an hour you can prepare the traditional carp with a vegetable filling.
1 big common carp
1 smaller carrot
1 smaller cucumber
150 g mince
5-6 olives without stone
5-6 mushrooms (maybe marinated)
100 ml of home-made puree
Butter, salt, pepper, dry spices, parsley – to taste
Cut the individual ingredients.
Clean the fish, wash it a little inside and out.
Stew in pan with onion and leek to soften, then add minced meat with salt and pepper.
Add the carrots, olives, peppers, mushrooms to the bunch. Lastly, you’ll put tomato paste, cucumber and parsley in the pot. Only stir and remove from the fire.
Fill the fish and sew it. Then smear it with butter, put baking paper and put it in a preheated oven at 180 degrees.
Bake it and lightly let it cool down. Serve with fresh salad.
Note: This recipe is suitable not only for carp but also for any type of fish to fill. It is important to combine fresh cucumber and minced meat as preferable in recipes are fresh, not marinated mushrooms.
